Keisuke Itoh was born into the restaurant industry in Kobe, Japan where he followed in his father’s footsteps to become a successful owner / chef for over 10 years. Keisuke successfully owns and operates 4 Itoh Dining restaurants in Japan with his first restaurant opening in his hometown in 2001. He holds sommelier certificates in wine and sake and is currently a partner with world-renowned chef Nobu Matsuhisa. It is under the mentorship and guidance of Nobu that Keisuke has decided to expand his business into North America. Keisuke is excited to bring his passion and love for his country’s food to Vancouver through Shirakawa.


Takuya Motohashi was also born into the restaurant industry. His father owned and operated a successful sushi restaurant for over 17 years. At the age of 18, Takuya moved to Japan to pursue a career as a sushi chef. The world famous Tsukiji fish market in Tokyo, Kishiwada and Shimokitazawa are the notable stops that were made in his training. Upon returning to Canada, and working for several years as an executive chef in Vancouver, Takuya left Canada and headed back to Japan in search of something that would spark a new interest in his career. It was on this trip that he would walk into Itoh Dining in Kyoto and meet his business partner, Keisuke Itoh.

Keisuke and Takuya have opened the doors to Shirakawa in Gastown next to the historic Blood Alley and are thrilled to bring their shared passion for exceptional food with Vancouver.
